Chocolate Zucchini Bread

3 eggs
1tsp. baking soda
1 C. oil
1/2 tsp. baking powder
2 C. sugar
1 Tbs. cinnamon
1 Tbs. vanilla
2 1/2 C. flour
2 C. grated raw zucchini
1/2 C. cocoa
1 tsp. salt
1 C. chocolate chips

Beat eggs until light and frothy. Add oil, sugar, vanilla, and zucchini and mix lightly but well. Combine salt, baking soda, baking powder, cinnamon, flour, and cocoa. Mix with wet ingredients. Add chocolate chips. pour into greased bread pans and bake at 325 for 1 hr.

makes 2 loaves

Crescent Rolls

10 min. @ 375 degrees

1 Tablespoon sugar
1 Tablespoon yeast
1/3 cup warm water
3/4 teaspoon salt
1/2 cup sugar
½ cup melted butter
3 eggs well beaten
1 cup lukewarm milk
4 cups sifted flour

Mix sugar, yeast, warm water in cereal bowl, let foam to top of bowl. Mix salt, butter, sugar in large bowl. Add to yeast mixture. Add the eggs and stir. Add milk and stir. Add flour and stir. Cover let rise for 4-5 hours. Form rolls and let rise 1 hour. Bake 10 min at 375. Makes about 32 small rolls.

SOFT BREADSTICKS

Ingredients
1 pkg. Regular or quick-acting dry yeast
1 1/3 c. Warm water (105 to 115 degrees)
3 tbsp. Vegetable oil
1 tsp. Salt
Coarse salt or sesame seeds (or melt butter and butter and garlic powder & brush on baked breadsticks
3 to 3 1/2 c. All-purpose flour
1 tbsp. Honey
1 Egg white, slightly beaten

Preparation
Dissolve yeast in warm water in 2 1/2 quart bowl. Stir in 1 cup of the flour, the oil, honey and 1 teaspoon salt. Beat until smooth. Stir in enough remaining flour, scraping dough from side of bowl, until soft dough forms. Cover and let rise in warm place until double, about 45 minutes. Heat oven to 400 degrees. Stir down dough by beating about 25 strokes. Turn dough onto generously floured surface; roll around lightly to coat with flour. Divide into 24 equal parts. Roll and shape each part dough into a rope, about 9 inches long, sprinkling with flour if dough is too sticky. Place on greased cookie sheet. Brush with egg white; sprinkle with salt or wait until baked and brush with melted garlic butter. When baking bake until crust is deep golden brown and crisp, about 15 minutes. Immediately remove from cookie sheet. Store loosely covered. Should make about 2 dozen breadsticks. 70 calories per breadstick.

If using self-rising flour, omit salt.

Banana Bread (Shirley Cottrell)

1 1/2 Cups Mashed Ripe Bananas
1/2 Cup Applesauce
2 Eggs
2 cups Rice OR Bean Flour Blend
1/2 Cup Brown Sugar
1 tsp Xanthan gum
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
1/4 tsp Salt
2/3 Cup Chopped Walnuts (optional)

Mix mashed bananas, applesauce and eggs together in a large bowl.
In a separate bowl, combine rest of ingredients. Stir into banana mixture.
Pour into oil sprayed loaf pan. Bake at 350 for 60 minutes or until toothpick inserted in the center comes out clean.

Zucchini Bread (Shirley Cottrell)

1 Cup granulated sugar
1 Cup Brown Sugar
3 Cup of Rice or Bean Flour blend
1 1/2 tsp xanthan gum
1/2 tsp salt
1 tsp ground cinnamon
1 tsp baking powder
3 eggs, slightly beaten
1 Cup Vegetable Oil
2 tsp Vanilla
2 Cup shredded zucchini, packed
1 Cup Chopped Walnuts (optional)
1 Cup raisins (optional)

Combine dry ingredients
add remaining ingredients
pour into 2 grease loaf pans
bake at 350 for 60 min

Banana Bread – (Christine Wescott)

Preheat oven to 350 degrees Makes 2 loaves
4 cups Flour
2 tsp Baking Powder
2 tsp Baking Soda
1 cup Shortening (I use Crisco)
2 cups Sugar
2 tsp Vanilla
4 Eggs
3 cups Mashed Ripe Bananas (approx. 6-8)
1 cup Milk
1 cup Chopped Walnuts (or nuts of your choice) (optional)

Sift together flour, baking soda and baking powder. Set aside.
Cream shortening, sugar and vanilla until light and fluffy. Add eggs one at a time and beat until thick. Add flour mixture alternately with mashed banana and milk. Beat until well blended.
Stir in chopped nuts if using.
Use 2 well greased and floured bread pans.
Bake 1 hour at 350 degrees.
Cool in pan 10 minutes and then remove to a wire rack. Cool before cutting.

Zucchini Bread

Ingredients:
3 eggs
2 cups sugar
1 cup oil
3 tsp vanilla
3 cups flour
2 cups grated zucchini
1/4 tsp baking powder
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 cups chopped nuts


Directions:
Beat eggs till light and fluffy.
Add sugar, oil, and vanilla, blend well.
Stir in zucchini.
Add dry ingredients.
Fold in nuts if desired.
Pour into two 9 x 5 loaf pans well greased.

WD Homemade Bread

1 1/4 cup hot water
1 pkg instant yeast
2 Tb butter/margarine
2 egg whites
1 Tb dough enhancer
2 cup white flour
1 1/2 C wheat flour
1/4 cup sugar

mix hot water and yeast, set aside for 5 min
add all other ingredients into mixer, then add water and yeast.
mix for 10 min
put in greased loaf pan
let rise about 30 min, (until even with top of pan)
cook on 325 for 30 min

makes 1 loaf
