Ingredients:
3 eggs
2 cups sugar
1 cup oil
3 tsp vanilla
3 cups flour
2 cups grated zucchini
1/4 tsp baking powder
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 cups chopped nuts
Directions:
Beat eggs till light and fluffy.
Add sugar, oil, and vanilla, blend well.
Stir in zucchini.
Add dry ingredients.
Fold in nuts if desired.
Pour into two 9 x 5 loaf pans well greased.
