1 1/2 Cups Mashed Ripe Bananas
1/2 Cup Applesauce
2 cups Rice OR Bean Flour Blend
1/2 Cup Brown Sugar
1 tsp Xanthan gum
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
1/4 tsp Salt
2/3 Cup Chopped Walnuts (optional)
Mix mashed bananas, applesauce and eggs together in a large bowl.
In a separate bowl, combine rest of ingredients. Stir into banana mixture.
Pour into oil sprayed loaf pan. Bake at 350 for 60 minutes or until toothpick inserted in the center comes out clean.
