Apple Syrup - (Shirley Cottrell)

9 cups apple juice or cider
7 cups sugar
1 teaspoon cinnamon oil or 1 cup cinnamon candies red food color
May make juice by using apple peeling. Core. Barely cover with water
and simmer till soft ( 20 minutes) Strain and measure.
Add sugar. May also add 1 cup applesauce if desired. Bring to boil,
cook 5-10 minutes. Add cinnamon oil and red food coloring. Pour into
sterile jars and seal.
