SB Grilled Salmon with Tomatoes, Spinach, and Capers

4 salmon fillets (6oz each)
1 Tbsp extra virgin olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 lb tomatoes, chopped
3 cups baby spinach
1 Tbsp drained capers
4 lemon wedges

Heat oven to broil. lightly coat baking dish with cooking spray

place salmon, in baking pan and lighlty season with salt and pepper. Broil without turning until salmon is cooked through, 8 to 10 min

Meanwhile, heat oil in large saucepan over medium heat. Add onion and garlic and cook, stirring occasionally, until softened, about 7 min, stir in tomatoes, spinich and capers. Cook 2 min longer, Remove pan from heat

Remove salmon from broiler and transfer to 4 serving plates. sppon tomato mixture over salmon, squeeze lemon wedges over top, and serve warm.
