2 tsp olive oil
1/2 onion, chopped
1 medium potato, peeled and diced
3 cups broccoli, chopped
3 cups vegetable stock
1 cup montery jack cheese, shredded
Heat oil and saute onion for 5 to 7 min. Add potatoes, broccoli, and stock. Bring to a boil. Reduce heat and simmer for 12 to 15 min. Remove from heat allow to cool a. It. Pour mixture and cheese in a blender. Serves 4
