WD Poppy Seed Spinach Salad (Ange Workman)

1 head leaf lettuce
2 bunches of spinach
3/4 lb. fresh sliced mushrooms
3/4 lb. grated Swiss cheese
1 c. cottage cheese (add just before dressing)
1 purple onion - sliced thin
1 lb. cooked and broken bacon

Dressing (place in quart jar)
3/4 c. white vinegar
1 1/2 c. canola oil
1 1/2 T. poppy seeds
3/4 c. sugar
1 1/2 t. salt
3/4 t. dry mustard
Place dressing ingredients in jar in fridge and shake occasionally

Place lettuce and spinach ingredients in a large bowl. Before serving, sprinkle cottage cheese over lettuce - pouring dressing over and put bowl lid on and shake to distribute oil. If bowl has no lid, just toss in bowl.
