4 cups Flour

1 cup Shortening (I use Crisco)
2 cups Sugar
2 tsp Vanilla
4 Eggs
3 cups Mashed Ripe Bananas (approx. 6-8)
1 cup Milk
1 cup Chopped Walnuts (or nuts of your choice) (optional)

Sift together flour, baking soda and baking powder. Set aside.
Cream shortening, sugar and vanilla until light and fluffy. Add eggs one at a time and beat until thick. Add flour mixture alternately with mashed banana and milk. Beat until well blended.
Stir in chopped nuts if using.
Use 2 well greased and floured bread pans.
Bake 1 hour at 350 degrees.

Cool in pan 10 minutes and then remove to a wire rack. Cool before cutting.
